Corn and Black Bean Guacamole



–         ½ red bell pepper, minced

–         ½ red onion, minced

–         2 cloves of garlic, minced

–         ½ (15.26 ounce) can sweet corn, drained

–         ½ (15 ounce) can black beans, drained and rinsed

–         3 ripe avocados, peeled, pitted and sliced

–         2 tablespoons fresh lime juice

–         ¼ teaspoon salt

–         1 pinch ground black pepper, or taste

–         ½ cup chopped fresh cilantro, or more to taste (optional)

–         ½  of 1  jalapeño, minced (optional)

1.       Wash all produce

2.       Mince bell peppers, red onion, garlic, and jalapeño

3.       Peel and slice avocado

4.       Stir bell pepper, red onion, garlic, sweet corn, black beans, and avocado slices together in a large bowl

5.       Mix lime juice, salt, black pepper, cilantro, and jalapeño into avocado mixture until desired texture is achieved
